You didn’t have to be a recipe nut to enter the Texas Co-op Power Holiday Recipe Contest, but you did have to use nuts in your recipe. Peanuts, that is.
Two Pedernales Electric Cooperative (PEC) members, Lois Masters of San Marcos and Dena Torres Whisenant of Blanco were enamed runners-up in the contest. The Texas Peanut Producers Board sponsored the contest. The recipes were required to include peanuts or a peanut product, like peanut butter.
Whisenant and Masters each won $500 and their recipes appear in the December issue the Texas Co-op Power magazine.
Masters’ winning recipe is the delicious-sounding Double Delight Peanut Butter Sandwich Cookies. Whisenant’s recipe is the spicy delight, Peanut Butter Stuffed Jalapenos. Their recipes were two of the five best recipes chosen from more than 1,400 submitted entries, a record number for the magazine’s annual holiday contest.
Masters says her recipe for the sandwich cookie evolved over the years from a combination of recipes.
“My husband loves peanut butter cookies, and he really likes this recipe!” she said.
Whisenant’s family also helped her develop a winning recipe. She said that she and her son Brock, 11, often read the recipes featured in the Texas Co-op Power magazine together. Said Whisenenant, “We love reading the magazine’s recipes, and the contest gave us a great chance to work together and create a unique recipe.”
